Inspired by Georgia, Slovenia & the raw-edge wines of Friuli.
Herbaceous, grassy, citrus pith. Forest floor funk. Salty wine spray, fennel, licorice, and briny grip. Tannins like a red, but lit with white-wine acid.
Roughly racked, yeastie cells deliberately left in to evolve + soften over time.
Unfiltered, unfined, and totally untamed.
